The other night we had grilled lamb kabobs (sorry no pictures). There was a good amount left over, so tonight I made grilled Lamb Quesadillas. All I did was put sliced lamb, shredded cheddar cheese, diced red onion, green pepper, and salsa between two large flour tortillas and then heated it outside on the grill.

MMm... lamb quesadilla.... never thought of that.... did it work?
It worked out very well. I think another great option would have been to make the lamb quesadilla with feta, roasted tomatos & red onions.
